Ripe Green Tomatoes

Many of you devoured our ‘unripe’ green tomatoes that we picked from the vine early from our giant beefsteak varieties, offering an ideal component for the classic Fried Green Tomatoes southern favorite on spring tables.

However, the green tomatoes you will be getting the next few weeks are actually ripe. They are a variety of tomato that is juicy and soft, yet remains green with a tint of yellow striping when ready to eat.

Green Zebra tomatoes add a bit of citrus zest to their sweet bite, reminding me of a strawberry margarita (could have been the 12 hour workday combined with biting into the first of the ripened ones right off the vine)

Green Zebra is a favorite of mine to add to red salad mixes, purple slaw and to create salsa verde using these tomatoes instead of tomatillos (not quite as sour).

Yes, we have tomatoes! And unlike many in our region after this wickedly wet season, ours really have some phenomenal flavor!!
